Summer Sausage Salad

Ingredients for 4 persons

Cooking instructions

 

  • Remove the skin of the Vienna sausages or the ham sausage and cut the sausages into thin slices. Cut the cheese together with the rind into thin slices. For the salad dressing blend the vinegar with the mustard and the horseradish to a smooth mixture and season to taste with

  • sugar, salt and pepper and leave to stand for 5 minutes. Add 6 tablespoons of water and then slowly stir in the vegetable oil.

  • Mix the sausage and cheese slices, and pour on the dressing, mix well and leave to stand for at least 30 minutes.

 

  • In the meantime cut the gherkins into thin slices. Peel the cucumber, cut in half and remove the seeds with a small spoon. Cut into small cubes. Clean the radishes, wash and cut into thin slices. Clean the spring onion, remove the ragged end at the top and cut thinly into diagonal slices. Peel the red onion and grate or cut into thin slices. Wash the chives, dab dry and dice into small rolls.

  • Carefully mix the gherkins, cucumber, spring onion and chives into the sausage salad, and serve on plates garnished with radishes and cress. Finally garnish with the red onion rings and freshly ground pepper and serve.
